Zoolak - A fermented preparation of cow's milk resembling the modern KUMISS (which see), except that the milk is sterilized before the addition of the bacteria culture used as a ferment. Fermented milk, known as Yoghoord, has been for centuries an article of daily diet in Armenia, Persia and other Oriental countries, the fresh product being very seldom consumed by the native inhabitants.
