Stearin--commercial -

Consists of the solid acids, chiefly palmitic and stearic, of animal fat. It is a hard, dry, crystalline substance of pearly color. Its presence in, or absence from, rendered beef fat is the principal difference between "tallow" and the edible "oleo" oil. It is extensively used in the manufacture of CANDLES (which see).
