Saleratus


Saleratus -

The monopotamic or monosodic carbonate. The potassium salt was formerly used in baking, but it has been generally displaced by bi-carbonate of sodium, which is preferable as a culinary ingredient and more easily assimilated by the system. See also article on SODA.
