Rennet


Rennet -

Is a digestive ferment extracted from the stomachs of young calves by soaking them in salt water for several weeks. Large quantites are used commercially, especially to coagulate milk particularly in the manufacture of cheese. It is also employed in the household to make many desserts of which milk is the foundation, being for that purpose retailed both in tablet and liquid extract form.
