Lemon Peel -

Is commercially most important for its use in the manufacture of lemon oil, lemon extract, liqueurs, etc., but considerable quantities are also retailed plain-dried for culinary purposes and preserved in sugar as "candied lemon peel," the best grades of the latter being prepared in much the same way as CITRON peel (see CITRON).
