Fruit Butters

Fruit Butters -

Are preserves of fruits, made without retaining their form, less sweet than jam and of a consistence somewhat resembling butter. The trade usually buys them in large wooden pails and retails them by the pound. Many of the lesser grades are prepared from damaged fruits and the lowest quality of molasses.
