Chowder


Chowder -

A dish composed of fish, pork, onions, biscuit, etc., stewed together, popular in all parts of the country, but especially appreciated on the New England coast, where "clam Chowder" and "fish Chowder" parties are very common. In New England, cider is sometimes added to the stew. The name comes from the coast of France, where the Chaudière is a large cauldron in which the fisherfolk cook a very similar mixture of fish. Chowder is now sold canned.
